How to bake a ginger cake that is so moist and soft yet really packs a punch with a sudden hit of ginger in every mouthful! Ingredients:
225g of soft unsalted butter
175g light brown caster sugar
210g black treacle
300g self-raising flour
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground mixed spice
4 medium eggs
4 tbsp milk
3 pieces stem ginger from a jar, finely chopped
Ingredients for the icing decoration:
100g sieved icing sugar
4 tbsp ginger syrup from the jar
2 tbsp milk
Chopped ginger pieces - small and roughly chopped
How to bake the ginger cake:
Pre heat oven to 160 degrees centigrade fan
Line a 24x30x4cm baking tray with parchment paper
Mix all the cake ingredients in a bowl with an electric mixer for about 2 minutes
Tip into the baking tray and bake for approximately 35 minutes
Take out and leave to cool
Remove from the tray, slice and leave till cold
Make the icing by sieving the icing sugar into a bowl, adding the ginger syrup and milk, then mix until smooth and creamy. Add a little more milk if it's too thick.
Drizzle over the cake and decorate with some cut pieces of ginger.
