SHRIMP COCKTAIL RECIPE:
Serves 4 (approx 206 calories per serving)
1 bag Extra Large shrimp, cooked, peeled and deveined (26-30 ct)
1 English cucumber, chopped
2 stalks of celery, thinly sliced
1/2 small onion, diced
1 c cilantro, chopped
2 cloves of garlic, minced or grated
1 jalapeño, seeded and finely diced
2 limes, zest and juice
1 orange, zest and juice
1 1/2 c tomato juice
1/2 c tomato sauce
Hot sauce of choice (optional)
Avocado, diced (optional)
Salt and pepper to taste
Thaw shrimp and rinse in cool water. Place in a large bowl. Pour all ingredients into the bowl and combine. Season to taste and add avocado and hot sauce if desired. Cover with plastic wrap and allow to sit in the fridge for at least 30 minutes. Place cocktail in a big glass and garnish with a shrimp, an avocado segment and lime. Enjoy as is or add avocado and hot sauce. Tastes great with or without saltines!
